Ingredients

Lemon – 10 nos

Garlic – 10 cloves

Mustard seeds – 1 tsp

Fenugreek powder – 1/4 tsp

Asafoetida( kayam) – 1/4tsp

Chilly powder – 4 tsp

Turmeric powder – 1 tsp

Dry red chilly crushed (optional) – 1 tsp

Mustard seeds powder – 1/2 tsp

Curry leaves – 2 sprigs

Gingelly oil – 4 tsp

Salt as needed

Method

Wash the lime and wipe off using a clean cloth. steam the lime for 10 – 15 minutes and keep aside for cooling.

Cut steamed lime into small pieces make sure to remove all seeds.

Heat gingelly oil in an aluminium frying pan and splutter mustard seeds. Saute it by adding curry leaves and dry red chilly under low flame. Again add chopped garlic cloves and saute it till gets brown colour. Then add chilly powder, turmeric powder, fenugreek powder and asafoetida one by one and saute for 2 -3 minutes, make sure that don’t burn. Then add enough water and boil till the gravy gets thick. Add lime pieces and combine well with the gravy,  add enough salt and cook for 1 or 2 minutes. Turn off the flame and allow to cool. Once get cooled transfer it to an air tight glass jar.

Heat 2 tsp of gingelly oil, cool and pour on the top of the pickle. This will prevent the fungal growth and gives more taste.
